MC in Media Server mode

If I run MC in MediaServer mode, if I play files does it suppose to show the UI? Because it always open the UI regardless of how it was started.

Yes, playback will open the UI. Media server is just for serving the current library, but not for playback functions. Under Options->General->Interface you can choose to minimize MC to the system tray if you don't like it hanging out in the taskbar. Then you can leave it running 24/7 handling playback and server functions.
