A couple of weeks ago, we started using ICETCP Pro 5.1.30 in a Citrix environment. Previously, we were using the desktop version of 5.1.25.
When we would copy and paste data from 5.1.25, the formatting of the text did not change.
When we copy and paste data from 5.1.30, the formatting of the text changes, and items are not lined up properly.
I have seen some threads stating that, with 5.1.30, you can have formatted or unformatted copy and paste behavior.
How is that setting changed?

It's in the profile under Keyboard settings. Checking the box makes it add cr/lf to the end of each line. If you don't do that, the contents are copied unformatted.
Note that you need to select your copy area from top to bottom, not bottom to top.
If you change the default profile it won't take effect until you restart TelnetPro. If you change the active profile it will not stick across sessions.
