Difference between add and copy to an empty channel

I'm using a matrix that works to up/downmix any signal 2.0 all the way to 7.1 to a 2.1 output setup.
I first used 2 separate ones for stereo and multichannel, and wanted to compare them 2 with preset on stereo music to see if the result is the same.
I noticed when switching to multi preset that it sounded a bit more open, and tried to figure out why.
Long story short, in one I used copy left channel to sub, and on the other I moved sub to U1 first, then add left to sub (not copy).
After more testings I found out that the sonic difference is because of the add vs copy for the first signal to go to the sub channel.
Theoretically, it shouldn't make a difference, between copying a channel to an empty one, and adding a channel to an empty one.

I would think one is the right way to do it, and the other is not, but I'd like to understand the bottom of it...
