There is a way to do this. In Media Center, if you go to Tools -> Options -> Media Network -> Advanced, select the option "Customize views for JRemote, Gizmo & Panel..." On the left is the category tree that you will see in Panel, JRemote, and Gizmo. Select Video in the tree and click the Add... button next to the "Items To Show" tree and select "Library Item". On the right side you can configure the view you just added. This time, click Add... next to the "Show Categories in This Order" and select "Name" from the list. Click OK to get out of all the options dialogs. In order to see the changes, you need to stop and restart Media Center and Media Server.
Keep in mind that what this will do is create a new thumbnail view in Panel under Video, but the list view will still be under it, like with Audio and Images When you click one of the thumbnails it will go into the list view instead of just playing. To play from the thumbnail view, you will need to right-click or do a long press depending on what type of device you're accessing Panel with.
