You can use an MC27 license now with MC26.0.98 or higher. You must download and install it, then restore using your MC27 license.

Is there any advantage to replacing a MC26 build license with a new MC27 license, or is just to allow new purchasers the opportunity to use MC26 until MC27 is released?
Sorry if that's a dumb question, I haven't upgraded versions before.

No advantage.
MC26.0.98 or higher will work with an MC27 license.

I recently purchased the upgrade to MC27. Unfortunately, I bought the Windows version instead of the Master Version (my MC26 license is a Master version). (I noticed this when I installed the new updated license.) Is there a way to change this license and pay the difference between the two? Or do I have to purchase the Master License and have an extra Windows only license that I don't need and probably never use? Or, how-about, any possiblility of refunding the Windows only license, then purchase the Master version?
