However, when I go into text mode and use the options you suggest to change the audio device then HDMI is no longer an option on the list and consequently I get no sound. When I reboot back into the GUI mode I can again see the HDMI option. Is there a way to access HDMI and be in text mode?

When you boot in GUI mode the HDMI port on the Id is activated by your monitor.
Boot in text mode requires a partner for the Id to negotiate the connection with.
Your amp should be connected and on when you boot.

Having the amp and tv on when I boot the Id makes no difference. Just tried it again and watched it boot on the tv, but still cannot see the HDMI device in the audio devices. Any other suggestions?

Where are you looking? Through the GUI?
What model of Pi?
Which HDMI port are you using?

After booting the Id in text mode (I've tried both the 2nd Headless and the 3rd with HDMI initialization options), then I have tried to find the audio device using Remote Desktop and also through the Panel interface.

I have an Id Nuc 300

I am using the HDMI 1 output from the NUC. That's going into my receiver and then the receiver is connected to the TV
It works great in GUI mode, so maybe will need to just use that. But do like the option of the simplicity of plain text

That's interesting, it sounds like it's only doing the HDMI initialization when it's booting the kernel in GUI mode.
I'll check that with my test one here.
