How can I upgrade from 30 to 31 while keeping my entire setup intact. When upgrading in the past I had to redesign/tailor-made a lot of my Panes, lists and detail menu structures and the remote part.

Do a backup in MC30 before installing MC 31, then when you have installed MC31 - don't let it run Auto-Import instead tell MC to Restore from Backup and select the one you created in MC30; that should bring the Library, Settings & Playlists from MC30 into MC31.
Unfortunately if you have any Non-MC supplied Skins and Track-Info plugins in MC30 you will have to manually copy them from the relevant MC30 folders to the ones MC31 uses.

You can restore a backup from a previous version.
When you do so there is an option to restore settings as well.
