Is there a way to display albums when looking at a playlist? All I see is a linear list of songs.

To be more specific in how you're looking at the playlist might help, but in my playlist view each entry shows the album it's from.
In Standard view click on your playlist and a listing should come up. If the album is not there right click on the header and select album. You can sequence by each header also by clicking on it.

I see the album cover with each song, but what I want to see is only the album cover, not each song. I did click what I think is the header you are referencing, but I do not see any list with 'Album' in it.

Try right-clicking on a column and selecting Image (Large Thumbnail).

From the playlist's tab menu, change the list style to "Thumbnails". See picture.
