I have been updating windows defender, still same thing. server on site a has never gone to sleep. this was all working seamlessly up until one update.....after that update, further updating it has got worse.....

Sounds like you may have a large complex network. Have other things on your network been changing during the same time period you installed MC updates? Like adding more cameras, more 24/7 recording, increased frame rate, changing network hardware (switches, ...), Unifi updates, etc.?
Consider turning things off, simplify as much as possible, reboot network hardware and computers, test MC, then slowly add network complexity and see what happens.
Did computers "invisibly" change their network connection frequency, between 2.4GHz, 5GHz, 6GHz? Increased channel competition?
Just guessing, in case the lack of nvr dropouts does not tell the whole story.

looks like my exceptions windows defender all went away. i put them back it has been better....any other ideas?

Sounds like the issue is resolved then.
It's possible the root cause was the Code Signing Certificate change that MC had not long ago. When you add an exclusion to a given EXE to the firewall, Defender will associate it with the signing signature of that EXE. Subsequent MC updates are signed with the same cert so the rule still works. However I recall MC updating their signing certificate on a recent update, and that may have triggered Defender to disable/remove the rule as it detected the new EXE with a different cert. Feature, not bug.
