I know this has to be simple, but I've looked and don't see how to "undo" this... ?

Never heard of the volume control disappearing.

Maybe Reinstall:

1. Video Drivers
2. Sound Board Drivers
3. ActiveX
4. Media Jukebox/Media Center

What soundcard are you using for playback?  I have two in my system, a Turtle Beach Montego II and and Echo Audio MIA.  I lose the volume control whenever I use the MIA for playback thru my hi fi.  I'm assuming it has something to do with the drivers and how they interface (or don't interface with windows).  Try making sure you have the most up-to-date drivers installed for your soundcard.
