Copying from Ipod to Hard Drive

First, I've been told that JRiver allows you to do this - Is this right?  Second, if I were to format my hardrive in order to upgrade OS and then copy music from my Ipod back onto my hardrive, would it be copied back to my HD organized by folder as I had it, or would it simply dump 15,000 files into one folder?  Thanks...

If you want your PC to interact with iPod, we recommend Media Center as opposed to Media Jukebox. Media Center will allow you to copy music from iPod to your PC. It would dump the files in one folder, but then you can use Media Center to automatically create your folders based on tag information.
