Media Centre burns work just fine on playback in my car's high-end JVC SX890 MP3 player... but same burns only get error messages on playback in my wife's new Chev Optra stock GM MP3 player.  However, Nero Burning ROM MP3 CD's DO work in her GM car.  Any ideas?  Should I untick CD text option for data burns?

It could be the media that you're using. If you can, test with another brand. I know Memorex CD-R media won't play in my wife's Honda stock radio (when media is burned to an audio CD no matter what software burned it) but it plays fine in my car with a Pioneer head unit. I know, it's odd.
