In v11, is there a way to use a different skin for the TheaterView like there is for the window view?  Or, even a way to change the basics like background color?

You have to manually edit the "main.xml" file in the appopriate FullSkins subdirectory.  Alternatively, you could try my full-screen interface plugin that is similar to TheaterView and allows you to easily edit the "skin" (shameless plug  ).
