Maybe I'm missing something, but how do I set where ripped DVDs get stored?

It certainly doesn't follow the File Location set in options.

you can at least change the destination path of the ripped dvd files by editing a registry key:
HKEY_CURRENT_USER\Software\JRiver\Media Center 12\Properties\DVDRip - Base Path
an example value for this text key would be "E:\DVDMovies"
The key will be created if you start ripping a DVD. Then you can cancel the rip and edit the key
