Missing playlists

At some point, all my playlists disappeared.  I haven't migrated computers.  They are all gone (including the JRiver defaults).  Any advice?   ?

There should be some automatic library updates. If you restore one of them (the most recent one I suggest  ;)) everything should be back. With WinXP you should find them here:
C:\Documents and Settings\[Username]\Application Data\J River\Media Center 12\Library Backups

I have two MC 12 directories with backups.  One is from May and the second is from today.    Which should I use?

Also, will a library backup screw up my tags, files etc?  If it's like a XP "system restore," I might lose files etc.

You will not lose any of your files! Restoring a database will not add and/or delete any of your files (Audio, Video, Picture). You only lose all your database changes since your last update. So if you did some tagging, created some Playlists or added some files to your library, between the backup time and the restore you will lose this information. You have to add the files again (but again: the files will not be deleted) and you have to recreate the playlists you created after the backup has been done.

You can get nack the tagging you did after backup: If your MC-Installation is setup to store all tag informations in the files itself if possible (this is standard for e.g. mp3, ogg, jpeg as far ass I know...) you may use right click on files -> library tools -> Update Library (from Tags). Then your tag changes are re-added to the library after restoring it.

So, to be sure you will not lose anything you shold go to MC and create a manual library backup (File -> Library -> Library Backup...). If this has been done, it is absolutly safe to restore any library backup, because the current library is saved. So go to the library backups and restore the most recent backup (the one from today). Take a look if it is as you excpected and if it's not, take the next one. If there is no backup you want to use: go back to the one you just created manually.

At least you should take a look at the reason why you lost all your playlists... it shouldn't happen again, I think  ;)
