The default set of tags consists of what you listed - can I change the default set so that "composer" comes up every time with a new LP or CD? Or must I enter it separately for each track of, say, a collection by one composer/

MrC has been giving you accurate information. I'll provide a step by step procedure for you to follow. It assumes that you are in Standard View rather than Theater View or Display View.
I'd suggest that you use manual import rather than auto-import. (Tools menu/Import).
1. Specify a folder and import the files in that folder. (If you have several folders whose files should the same composer tag, import all of them.)
2. After JRiver MC finishes importing the files, it will display the Recently imported Playlist. The files you just imported will be at the bottom of the list.
3. If the Tag window is not visible at the lower left corner of the MC window, use the Edit menu / Tag to display the Tag window.
4. Look at the column names above the list of files. Check to see whether "Composer" is present as a column heading. (You make have to use the horizontal scroll bar at the bottom of the screen to see all of the column names.) To make the "Composer tag visible in a column, right click in the column heading area and click beside "Composer" in the list of tags that appears as a drop down menu.
5. Now in the Tag window, click on the gear symbol at the left side of the top of the tag window.Click on "Show tags in current view.
6. In the list of files, click on the last file you imported and then Shift-Click on the first file for which you want the same composer value.
7. In the Tag window, locate the word "Composer" and type the value you want in the entry field to the right of the word "Composer". This sets the same composer value for all the files you have selected. If you have 20 CDs for which Composer="Beethoven", you can import the files from those CDs and then set the Composer value for all the files at once.
You only have to perform steps 4 and 5 once. The "Composer field will be displayed in the file list and the tag window every time you come back to the Recently Imported playlist.
