I would like to run MC on 2 machines.

Would it be better to have one computer running as server, but also with a client running on it in one room.
And have the second machine running as a client in another room?

Or, not use the server and just run MC on both machines accessing content stored on external drives over LAN?

I've used both options before. I am now very happy with the first option. You should, however, try to make the filename path for your media files the same on both computers. So if the files are actually stored on an external device, make sure that the device is mapped to the same drive(s) on both MC server and client machines.

I tried using the Server option but video was tending to stutter a bit.
Seems to work better just mapped although the Sever option seemed easiest.
