Title: Extract audio from .mkv files?

Is it possible to extract the audio part of a .mkv file?

Media Center has a "convert video to audio" option which will extract the current audio track (and convert it to a format like FLAC).
If you need it in the original format, you should be able to use a tool like MKVToolNix https://mkvtoolnix.download/downloads.html (though I haven't tried it on macOS).
