I would like to rip the "audio only" from the DVD "Pink Floyd Pulse" (a concert video) - to make a CD that I can play in my car. How is this done?

I guess JRiver doesn't have this ability - or I'm just too impatient to wait for a response.
I'll try "DVD Audio Extractor". They have a free trial period - and I only have one DVD that I want to extract audio from.

A pure extraction in the original format is not supported.
What else you can do, although I'm not sure if it works with DVDs, but with other movie files you can change the media type to Audio and then run conversion to eg. FLAC and get the audio alone.

For a one shot application, I'd go with this. I use DVDFab and their Blue-Ray Ripper, both have capabilities of extracting the audio tracks (in whatever applicable format) and saving them in a multitude number of fyle types and formats. It has a trial period to but in the end, its not free

Try right clicking a DVD you've ripped in MC and choosing the option to get the audio. I've forgotten the exact term. If you Google here you should find it.
