I am running JRiver Media Center on my QNAP TS-563A NAS. The NAS is connected via HDMI to a Denon 4520CI receiver. Which Audio Device option should I select if I want to bitstream audio to the Denon? See attached image for the options that I have available.

Try hw:CARD=PCH,DEV=0 [ALSA] - if it works on HDMI, then that one. Otherwise you'd probably have to keep using the one you're using now.

hw:CARD=PCH,DEV=0 [ALSA] - DID work
hdmi:CARD=PCH,DEV=0 [ALSA] - Did work
So, is there any reason that I should choose hw:CARD=PCH,DEV=0 [ALSA] over hdmi:CARD=PCH,DEV=0 [ALSA] or vice versa?

The devices are the hints that the system provides. In many cases they are the same device. In the case of hdmi vs hw I believe they are both connecting at the hardware level.
Things like
pulse:
default:
go through the system mixer and usually only support one sample rate (usually 48k).
