Which one to use for Ubuntu?

Well, it depends on the architecture of the CPU you're using Ubuntu on. Is it an Intel or ARM CPU? Fortunately, there's an easier way...
I'd recommend using the installJRMC script, it should automatically detect the architecture and install MC for it.

The script is the simplest way to do things.
But if you are going to download via one of the links, go for 'AMD64'.
