MediaCenter 21.0.45.... recently, not sure when... MediaCenter is playing louder overall. My system sets the volume in a preset at startup, so I know my audio system volume has not changed, and not changed across multiple processors/amps....
I have to turn the volume down in every zone now.
I have VolumeLeveling ON and AdaptiveVolume OFF.

We just thought people would like the sound a little more if we made it a little louder.

There was this change recently (in 21.0.1):
NEW: Volume Leveling uses the additional Headroom provided by Internal Volume for a more consistent experience on highly dynamic tracks or when downmixing.

I've had many MC versions since 21.0.01 ...and I don't use internal volume.
Something changed in my perception, if there were no code changes to cause it, then it has to be my ears or my brain.... scary.

This has happened to me several times. In *my* case, it was always because something had changed with my System volume on the sound output I was using. Or Volume leveling was OFF when I thought it was ON.
It's unlikely that you think every zone is louder. Possible.
Can you easily roll back to a version that's a few back from where you are now and see if anything changes?
