I have created several custom fields, which I use in my library views.
I copied some of my files on another hard disc.
If I then import them in a new library, I find that the custom fields are not seen by MC, even though they are somehow present (Foobar200 sees them).
Why is that?

You need to re-create those fields in the new installation of MC. Make sure the data types match.
Then, you need to tell MC to re-read the tags inside the files. (Select some files) > Right click > Library Tools > update Library (from tags) . MC will then populate those fields from the tags inside the files.
