I have a pretty good amount of 24 bit 192 music. I do want to convert some of them to 16 bit AIFF so I can play them on my apple devices when traveling. I can't figure it out. Some step by step advice would really help.

Just pick 16-bit on the output settings during the conversion.
Options > Bitdepth > 16-bit

Select tracts to convert
Right click and select Library Tools - Convert Format
Select AIFF
Options -Audio - DSP Settings - Output Format - convert 192 to 44 KHz
Audio - Set bitdepth to 16
Set mode

Make sure dither is set to TPDF in the general Media Center options too, since you're reducing bit-depth.
I'd also suggest ALAC rather than AIFF. (or AAC if you set up an external encoder like QAAC (https://sites.google.com/site/qaacpage/))

Set mode
Make sure you look at the mode and set it to what you want! The default is to add the newly created files to your library, which you almost certainly don't want. There are other options to delete the originals, or to just create the new files and not add them to your library.
