My setup is like this: Video in the tree --> Categories --> Series --> Series sorted by date last opened. (https://i.imgur.com/UGNTlgf.png)
When I'm using sorted by "Last played", every time you've finished an episode in a series, the series is sorted to the top.
When I'm using the "Date last opened" sorting, after accessing an episode in the series, sometimes it's sorted to the top and sometimes it doesn't sort at all.
I think it has something to do with this:

It pretty much says "avg" there. I think that might be messing up the sorting. I noticed that if there's multiple episodes you've watched in a series, it will say "avg" in the tag, and when you start to watch a new episode, the series is not sorted to the top.
