Long time Media Center user here and I apologize in advance for the basic question.
How do I sort albums alphabetically in the Artist view and make it stay that way (not a temp sort)?
Audio --> Artist --> Album (alphabetically)
For the all artist's view and the individual artist's view.

I have achieved something similar by creating a number of custom tags - this is done via MP3Tag and creating an action. So you could create a tag called MyAlbumSort, say.
Then in MC, you can create a new Panes view that including this tag, together with any others you want, and it gets sorted by your custom tag.
There might be easier ways, but this would work.

In general: right click on view in question in the tree and select "Customize View..." then "Set rules for file display"
Modify Results ==> Sort By ==> Add ==> Album (a-z)
View will be sorted with these criterias the most meaningful being the the top one and so on
