The current releases of MC continue to be based on Debian Buster. I notice that Bullseye is now the current official version of Debian.
Is MC stable on Bullseye? I am wondering if I should upgrade my Rpis to Bullseye from Buster?

The current Media Center builds are built on Debian Buster, but that doesn't mean it won't work on Bullseye (or other distros for that matter). In fact, Media Center 28 works fine on Bullseye and has since day one.
My Raspberry Pi has been running Raspberry Pi OS Bullseye since the first beta and it's been great.

Another datapoint here for Bullseye stability: I transitioned my JRiver server to bullseye more than a month ago and there have been no issues. Everything works as normal and expected so far.

In general we try to stay behind the latest releases for reasons of compatibility until we need to use features of a newer library in linux or of a newer version of gcc.
Those would mostly (but not exclusively) be concerned with video.
