Ctrl + J brings up the rendering stats during playback - how do I see the off-screen stats?

No, its not possible to scroll them. The detailed breakdown at the bottom is also not that crucial, as long as you can see the summary line at the top. If you run lots of rendering steps the list won't fit most screens.
