All I need to do is change my disk drives file letter to G and then add that into the file location in JRiver, however I have google drive and I can't choose G for my M drive.
What is the work around for this? Do I need to somehow change the tracks destination or some other way?
Or is there a way to add the new file location when I'm importing but then each track with G drive as its destination will still be the same...

You can change the Google Drive letter:
https://support.google.com/drive/thread/236268087/change-drive-letter-of-google-drive?hl=en
Or you can use MC's Rename/Copy/Move tool (select all files, then press F6) to point all your files from G: to M: (rename)

Personally, if using the rename tool for this job, I would use the "Find and Replace" area at the bottom, in "Update to point to new location" mode (top dropdown).
Find What: G:\
Replace With: M:\
However, the OP is not 100% clear.
If you need to update existing library entries to point them to a new drive letter, then the above is the way to go. Select all affected files before pressing F6, pay attention to the before/after columns to be sure you're happy before proceeding.
If you also need to update where auto-import is looking for files, go to "Tools > Library and Folders > Configure Auto import"
