I recently acquired a playback designs MPD-8 DAC and MPS-X streamer. When I select either one from the drop down menu it says [Core Audio] after, doesn't that mean that the apple os is upsampling the data instead of sending the music bit perfect to the DAC/Streamer? When I had Chord Dave it used to just say DAVE in the drop down menu and never [Core Audio] after, that's how I knew my Chord DAC was not being upsampled.

Also should I enable bitstreaming or not with Playback designs DAC's as they are DSD DACs from the guy who created DSD for Sony:

If you use the (Default) CoreAudio output, it'll go through the system mixer. It's highly recommended to select the CoreAudio output for your DAC instead. From there you can go into the Device settings and make sure the Open device with exclusive access box is checked, this will make sure it bypasses the system mixer and no resampling is done.
As for DSD bitstreaming, you can enable it if you want, yes, but make sure a) you have DSD content (e.g. SACD ISOs, DSF files, etc.) and b) the DAC you're using supports DoP as it's not possible to output native DSD on macOS, only DSD via DoP.

One last thing, why did it not say [Core Audio] after my Chord DAVE, it just said DAVE.
