How would I go about making a smartlist of only songs which are by artists whom I only have one song. Anotherwords, I want to make a listing of my one-hit-wonders.
Any idea?

If they're all in the same directory, you could use [Filename (path)]=[C:\Path\"

No, I have everything, including artists with only one song and artists with many songs, in the same directory.

Well, you could create a new field or use a current field (like comment) and add something that distinguishes those songs from the others
like [comment]=[OHW] and have OHW in the comment tag.
Now if you have complete albums of the others, MC should be able to show them as 'Complete Albums' and then the rest of the songs would fall under the 'Incomplete Album' view.

That's pretty cool. I didn't know it could do that. I mainly thought it was for duplicate files.

I'm been trying to get a random 1 track per Artist for sometime now.

So you need the nudups feature to act on the current selection (your random list) rather than the whole library. mmm.....Don't know but someone will.
