What're the best settings for encoding mp3s? I have --alt-preset extreme/ q 0 in there right now, is that correct syntax (with those spaces and everything)? I don't think it is because it is freezing up MC every time I try it.
Any recommendations?

Try:
--alt-preset extreme -q 0

It should be just --alt-preset extreme
Have no idea what the "/ q 0" is...but it is unnecessary.
Using standard will reduce file size a bit, yet still maintain high quality. Extreme may do better on harder to encode material.

Bitrate is of course the main influence on quality. The higher the bitrate, the higher the quality. But for a given bitrate, we have a choice of algorithms to determine the best scalefactors and huffman encoding (noise shaping).
-q 0: use slowest & best possible version of all algorithms. -q 0 and -q 1 are slow and may not produce significantly higher quality.
-q 2: recommended. Same as -h.
-q 5: default value. Good speed, reasonable quality.
-q 7: same as -f. Very fast, ok quality. (psycho acoustics are used for pre-echo & M/S, but no noise shaping is done.
-q 9: disables almost all algorithms including psy-model. poor quality

There is no point in using -q x with the presets...they already include the optimal value

I have seen a -q switch in some encoder software I used to use, which denoted quality, however with the string presented here I expect that Xen is correct and it is unecessary.
If you are THAT concerned about sound quality why not give APE a go? With the price of harddrive space these days it is worthwhile if you are ripping.

Well, the "-q 0" actually did work. I read here http://www.ipodlounge.com/forums/showthread.php?s=&threadid=8360 (http://www.ipodlounge.com/forums/showthread.php?s=&threadid=8360) that it had the best quality sound (4th post down, RandyP). If it's not necessary though, then I could leave it off.

Why? See above.
If your looking for something that wastes bits for no real gain then keep doing what you're doing. If you demand even better try lossless.
