Title: Buying MC for someone else.

I installed the MC11 demo on a friend's PC but she's not sure she'll keep it.
Is there a way I can pay for it myself without going through Help from that computer?

On a computer that does not have MC installed, install the version you want to purchase, but use your friend's e-mail address when you do the purchase. The license will be sent to her via e-mail, and she can do restores.

But will the licence still be in the name of the credit card holder i.e. the buyer and not the user?

I think you can have it registered in what ever name you like.
