How can I set my podcasts to delete automatically once I have listened to them (on my ipod)?

You could make a smartlist that says [Genre]=[Podcast] [Number Plays]==0 and sync it.
Then, any files that have been listened to won't be in the sync.

Thanks I already had that except I had "[Number Plays]=0" with only 1 "=". Should it be "==" or "=" ?
Another quick question, is it possible to not have the name of a playlist group appear in brackets as part of the playlist name on the iPod. e.g. I have an "iPod" playlist group, with a "blues podcasts" smartlist in it, and on the ipod the playlist name displays as "blues podcasts [ipod]" , I would much prefer it to read just "blues podcasts".

It probably doesn't matter. Check the help file (or use the wizard) to specify exact match, greater than, etc. For simple searching, you won't go wrong either way.

This is not configurable. One option would be to keep the playlists outside of a group.
