I have a 60Gb iPod, which is nearly full so I decided to free up some space. I restored the iPod then changed the conversion settings to 'Always convert audio' at MP3 128k. This would down size most of my tracks, which are between 192 & 320 kpbs.
Now I knew this would take a while with 9500 tracks but I really wasn't expecting it to take 70 hours! Will my CPU cope with running at 100% for 3 days or will it get fried? I have an AthlonXP 2700 with 1 GB RAM.

Try using the gogo encoder instead of Lame. It's faster.
