Title: With two instances of Media Center running on the same library ...

In version 12.0.268 MC wrote something that two instances of MC could run on the same library ...
Does this mean that I can have a central library on e.g. a file-server with multiple (more than two) MC's pointing to the same library with no crash/confusion in the library?
What happens if one instance of MC updates the library - does the other instances see these changes immediately?

First: yes you can share a library stored on a file server with many media centers (on different computers).

The first MC gets read/write access, the rest get read only access (and do not see changes written by the first MC).

And something very recent, you can actually do this with two MCs running on the same computer.
