Title: Video camera, old skool

Ok so I've got some footage that I want to get off a very old video camera (non digital) its on the old Hi-8 tapes.  Obviously there is a RCA out that I can convert to s-video with an adapter......how would I record this as I play it?  Sorry if the answers easy but I'm a bit of a TV card / media centre n00b.
