I know this might sound like a simple question, but when I uploaded a music video onto my ipod classic (video), it was put under the "movies" category on my ipod, instead of the "Music Videos" category. Is there any way to move it to the music videos category? Would I do something different in Media center before I transfer, to direct it to the right place?

Use the Media Sub Type tag in Media Center to specify what type of video it is. Music Video is one of the choices.

I am not sure if this is what you mean, but I clicked on the video and hit Edit>tag. A menu came up near the bottom left corner of the screen. However, I believe that the tagging options did not include what type of video it is. :P

Right-click in that window (the tagging Action Window) and select Show All Tags. You can also add that tag to the columns in the view that lists your videos (right-click on one of the columns in the view that lists your videos and pick Columns from the menu).
