Also, can I add a custom column called Language?

Yes, there is an option to manage database fields and you can add custom fields. I think it's in Tool>Options somewhere.

You'll find it at: Tools > Options > Library and Folders > Manage Library Fields

First add your field, then it will be available for you to add as a column in a view just like any standard column.
