Shepherds Pie

Ingredients
 
2 tablespoons olive oil
1 lbs lean ground beef (Originally with lamb)
1 onion, peeled and grated
8oz of mushrooms
1 carrot grated
2 sprigs fresh thyme, chopped
1 teaspoon rosemary
2 garlic cloves, grated
1 tablespoon of butter
2 tablespoons tomato puree
4 ounces red wine
2 tablespoons Worcestershire sauce
1/4 cup chicken broth
2 lbs boiled potatoes
2 egg yolks
2 tablespoon of butter
4 tablespoons Parmesan cheese ( grated-for inside mashed potatoes)
1 tablespoons Parmesan cheese ( grated-for top of mashed potatoes)
fresh ground black pepper
salt

Directions

In a large frying pan, heat the oil until hot, fry until well browned. With a slotted spoon, remove the meat from the pan and place in a metal colander to allow the excess fat to drain.

wipe out oil in pan leave a tablespoon in the pan

Add the meat back in

Add the onion, carrot, garlic, mushrooms, and a knob of butter to the pan, and cook until soft and translucent.

Cook stirring constantly for 2-3 minutes.

Add the Worcestershire sauce, red wine, tomato puree, thyme, rosemary and cook until the liquid has reduced to half the original volume.

Add the chicken stock, bring back to the boil cook for 3-4 mins.

The mixture should be thick and glossy. check the seasoning.

Mash the potato in a potato-ricer.

Put into a medium-sized mixing bowl, adding the egg yolks, 4oz of Parmesan cheese, 2 tablespoons of butter, mix and season with salt and pepper.

Put the mince into baking dish, then top with the potatoes.

top with salt and pepper top then grated Parmesan cheese.

Use a fork to rough up the top.

Place in a preheated oven at 400°F for 18-20 minutes or until bubbling and golden brown in color.

How do I know there's Shepherds Pie in there?  ... could be a corn muffin disguised as a Shepherds Pie.  Imposter! Imposter!

By The Way This Was The First Shepherds Pie Sue Liked.

When watching the video I noticed the oven was set to 180c that's 365F but at 20 mins it was just starting to brown, so i adjusted the recipe to 400f for 20 mins. I have a convection Oven so this may had something to do with it. I also found about 30 recipes for Gordon Ramsay's Shepherds pie and none of them were the same. some of them said two liters of chicken broth (really). one of them said add milk to the mashed potatoes.

this recipe I feel is closer to what the video depicts than all the recipes i have read.

I did add two tablespoons of butter to the potatoes, it made them taste better.

I did find a video where he used mushrooms in the Shepherds pie, so I also added them to mine.

Last time the in-laws were here, they tried baking some confections whose name escapes me.  Ok, now I'm thinking they were macaroons.  Anyway, after low-heat baking for almost 50 minutes, there was no browning.  I hinted that some ovens have poor, and widely varying, temperature control, esp. at low heat.  I hinted ours might be one of those.  We're fortunate enough to have one of those haughty name brands, but still, no browning was occurring.  I poked the temperature up sneakily, and that cured The Case of No Browning.

In temperature measurements of a previous oven, I found it would vary by 75 degrees, typically falling towards the low side for too long.

Today I Got In Some Forms For Making Deep Fried Tacos, And One That Will Form Up A Wrapper To deep Fry A Wrapper to make a taco salad.

So that is on the plans for tomorrow
