I am not using bitstreaming but am outputting to my dac via spdif.
I can't really notice a difference in enabling this setting or not (but I haven't A/B 'd.) All I know is at a volume good for voices, sounds like explosions almost blow things off my coffee table. I have an audiophile setup but it is very minimal... no bass/treble, dsp, even analog volume is not remotely controllable so if I can do anything (besides adjust volume) via MC that would be great. Maybe I need to set up a seperate zone and use dsp settings?

That sounds like the speakers are mixed up. Take a look at "Output Settings" in the DSP Studio.
The audio topics on the wiki might also help.

Two things:
1) Make sure you select the correct number of channels in DSP Studio > Output Format (or else the center that contains all the dialog will get dropped instead of mixed in)
2) Movies generally have a large dynamic range, so some amount of this is normal
