When I navigate to Audio>genre all my music is organised by artist. Can I change this so it shows my music by album title within the separate genre views?

It would help if you mention the view type you are in ;) Standard View or Theater view.
Both views can be customized to do exactly what you want to. You have to customize Theater Views in Option and Theater View, and standard views can be configured with a right click on the views. You need to add a category called Album. If you want genre then album, then the categories must be in that order.
For example a Theater View:
Options - Theater View - Items To show. Browse to the view you want to change. For example Genre. Click add and choose Album. Order the list so Genre is first and then Album and remove Artist. Click ok and try the new view. You can do pretty much anything with views in this options. Playing around with it and experimenting might be a good idea.
