Title: What does Associate with DLNA server mean?

I am not sure what "associate with dlna server" actually means as an option and the help files are not very helpful.

You can have any number of servers.  One for an XBox, one for a PS3, one for a TV, etc.

You can tell Media Center to use a particular server for a particular renderer when needed.  It's only necessary when you have several servers.
