I installed MC18 when the first released was made available and have updated to 18.0.48. Everything seems to be running without any problems. When I first installed MC18, I retained MC17 just in case of any problems with the stability of MC18. I am happy that MC18 is stable so I am ready to uninstall MC17.
Can I just do a simple uninstall of MC17. I don't want to lose any data settings.

As far as I am concerned, yes. The two versions should operate independedly of each other.
However, the current version may be stable for you now, but what if one of the next updates introduce issues for you? It's still beta after all.

I've already updated all my boxes. If any update introduces an issue we always have the ability to rollback to the previous backed up version.
