Sure.
If you use a Categories view, set the List Style to Details.
If you use a Panes view, you can remove the cover art column from the File list.

Thanks for the reply. Hmm, I must be blind, still can't see it. I selected Categories view, how do I then sort or filter on files that don't have art?
I have elected for all my art to be written to the files.

Oh, I see. The subject is ambigous (create a view that does not present cover art vs. create a view that shows files that are missing cover art). Sounds like you want the latter.
Customize the view, and set the Rules for file display to:
Image File is Empty
