Hi,
I couldnt find a topic explaining how to add new categories in the video area (like rock concerts, kids, etc) and how to move the movies from the actual category to the new one. Would you help me with that please?, thanks in advance

This is all done by tagging and making sure your view contains the right categories.
Create a new tag and for each video put into it the category that you want yhe video to appear in. That's it.
Or, if you're already using the Genre tag, simply add new entries to the list. For example, suppose you have a video with a genre of "Action; Adventure" than you can add a new genre by changing the tag to "Action; Adventure; Comedy". Therefore "moving" a video from one category to another just involves changing the tag.

For "Top Level" categories, I generally use the Media Sub Type field.
So, for example, the things that get automatically set for this are Movie, TV Show, and Home Video. However, there is also Music Video, Educational, Short, and Trailer, all of which might be relevant for some media types.
And, yes, as csimon indicated, then you set up your views to include/exclude some of these types based on what you want the view to contain. I explained some other strategies I use in more detail here:
