For example, The Doctor Who Christmas Special - Farewell to Matt Smith exists in TVDB (http://thetvdb.com/?tab=episode&seriesid=78804&seasonid=26260&id=4750368&lid=7) but how do you tag the Series and Episode info in MC to pull the data?

Specials are regarded as Season 0.
Eg. 'Doctor Who (2005) S0E101' finds me the right thing.

FYI to keep things in the correct "Display Order" in TheaterView I then change Season back to "7" in this case else all the specials are grouped up front. The other option would be to sort by "Originally Aired" but MC does not pull this info.

Using your example, Doctor Who (2005) S0E101 Farewell to Matt Smith, the way MC19 works for me is that the data shown as "First Aired" by thetvdb is entered in "Date" field.
I'm not at my home system but I'm purty durn sure that I can sort by date as you describe.

I just checked and you are correct, the Date field in MC is populated with the "Originally Aired" date.

You don't even need to edit the Season/Episode - in the Dialog that comes up when you do Get Movie & TV Info, you can edit this information in the top line to pull it from the Specials category on TheTVDB.
Thats how i usually do it. Its not automatic and requires a bit of manual fiddling, but not many shows have specials that need to go into the normal season order somewhere.

Thanks - I found that as well.
FYI - I just checked my library and I have a fair few that were imported prior to MC having this feature so I need to go back through them all and make sure I grab the latest correct meta data.
