First: GREAT job MC developers. This product gets better by the day!
1: I recently ripped some DVD's with h264 and saved in containers MKV and MP4, but when I play remotely the entire file seems to need to download before playing? I am pretty sure this does not happen with my avi's, wmv's or mpeg's. AM I missing something, maybe a setting somewhere?
2: Is there any way to get a video display without any of the controls or menu? Just a nice thin border and nothing else?
Cheers :)

Detached display.

Detached display.
Found by bringing up the context menu (right click) on the screen or Ctrl+6.

I work to a similar format plan.
If remote means &/or includes streaming via a local network, then I can offer that MC works fine for me. I've just applied the advice from the Wiki, such as:
http://wiki.jriver.com/index.php/Network_Access (http://wiki.jriver.com/index.php/Network_Access)
http://wiki.jriver.com/index.php/Tremote (http://wiki.jriver.com/index.php/Tremote)
I don't understand how file format would be relevant.

You can also do it via MC's Automation commands (MCC 10037 (http://wiki.jriver.com/index.php/Media_Center_Core_Commands#Playback)).
Detached display size and positioning (including fullscreen/windowed status) is remembered on a per-zone basis. So, when you close the Detached Display (by reattaching it or exiting MC), it will go back to where it was next time you open it.
If you want one that always goes to a certain spot (such as fullscreen on a certain display), you can just make a separate Zone for that display, and it'll always go there when opened (so long as you don't move or resize it before closing it). And, if you always want it open, you can accomplish this with a simple script (http://yabb.jriver.com/interact/index.php?topic=79166.msg537977#msg537977).
