Use a View that shows all your files - such as Audio/Files. Press Ctrl + A to select all files. Copy. Paste into a spreadsheet program such as Microsoft Excel or OpenOffice Calc. You can change the View to include/exclude columns to show the tags you desire.

If you want to save everything (as opposed to fields visible in the current MC pane), you can export the entire library in XML format. Select the library in the 'Playing Now' tree. The last button on the main pane is 'Export to XML'.

The copy-paste-to-Excel approach is great when you want a subset of the data. But it does not work if you have too many tracks (3k tracks is fine, 55k tracks do not get pasted to Excel). I do not know where the limitation exactly comes from. Excel is a likely culprit, since I can't import the XML file for my 55k tracks in Excel.
