Video Conversion is not working

I'm running MC 15.0.174 and attempting to stream Videos to my PS3.  Every time I try to view an MKV file I get the dreaded "The server is perparing this file. Please try again in a few minutes" message, but when I check the temporary conversion folder nothing is happening.

I've tried setting the Video Conversion to MPEG2/DVD Stream and MPEG4 with no effect. I have "Convert Unsupported Formats" turned on.  In Advanced I have DLNA, DLNAExtra and PlayStation 3 compatible checked off.

Is there something else I should be trying?

The PS3 cannot natively support mkv's so you need to convert them. You could turn on the PS3 compatible option to get more finely tuned support for the "Convert Unsupported Formats" option.
The DLNA option should always be turned on for the PS3.
The mpeg2/dvd stream would be the conversion I'd choose. It's possible that the ffmpeg converter can't read you mkv's if you are still having trouble.

I already have it set up as PS3 Compatible, and Media Center can play the MKV's (although there's a serious framerate issue with the video) but, as far as I can tell, MC isn't even trying to convert the file before streaming it because nothing is appearing in the temporary conversion folder.

It's most likely that the version of ffmpeg we are using can't handle the input format. I'm not sure what to suggest other than playing around with using a different executable. It's in your application data directory under plugins...
